Matt's WoFaSa W

That's Matt's WOrld FAmous SAlsa.

 

OK, so maybe not WORLD famous, but my mom certainly likes it.

All right, at least she SAYS she likes it - what else is she gonna say?!

I use a Salsa-Maker - you know, one of those hand-operated food processors you see being pitched at the state fair or park-n-swap. (You might also find these in your local Walgreens drug stores). You can just dice up everything by hand if you don't have one; but I DON'T recommend a blender, as it will make the pieces too small, and half the fun is the chunkiness.

All the ingredients should be fresh, right off your grocer's produce shelf, with the exception of the vinegar, which obviously comes from a bottle. After you make the salsa, let it sit, covered and refrigerated, for a few hours for the taste to come through.

My favorite chip for these is white corn tortilla chips, but you should use whatever you like best.

The items marked with a single asterisk (*) can have their quantities adjusted to taste. The items marked with a double asterisk (**) can be left out entirely, if for some reason you don't want or like that ingredient (allergies, etc.).

  • 8 tomatoes - the riper the better. If you want, substitute about 12 to 15 Roma tomatoes for these, or mix the two kinds of tomatoes
  • 2 yellow onions - peel the brown stuff off the outside
  • 2 to 4 cloves of garlic.(*) I dice these finely by hand before putting them in the salsa-maker.
  • 1 green bell pepper(**)
  • 1 clump of cilantro (the size of a small bouquet of flowers)
  • 1/2 to 1 jalapeno pepper.(*) I suggest you start by putting in only 1/4 of the pepper until you are sure how potent the pepper is - the hotness definitely changes from time to time. (Note: you can get the FLAVOR of the jalapeno without the spiciness by leaving out the seeds and the ribs, which include the capsaicin-producing placenta. Click HERE for a diagram.)
  • 8 scallions - I cut off the fuzzy end and use all the rest.
  • 1/3 of a small cucumber(**) - peeled.
  • The juice from one lemon
  • The juice from one lime
  • 2 tablespoons of apple cider vinegar(*)
  • 2 teaspoons of salt(*)

Here are some other ingredients you can add - I have included some of these from time to time....

  • Anaheim chili pepper - without the seeds
  • Red bell pepper (adds nice color)
  • Yellow chili
